Tricolour Spirali Waldorf Salad

Ingredients

  • Del Monte Gourmet Spirali Tricolour – 300 grams
  • Field fresh Red Apples diced – 500 grams
  • Walnuts, shelled & halved – 100 grams
  • Celery – 3-4 stalks
  • Lettuce Leaves – 1 bunch
  • Freshly cracked black pepper – to taste
  • Salt – to taste
  • Mayonnaise (eggless mayo. for veg option) – 1½ cup /as required

Method

  1. Cook Del Monte Spirali Tricolour pasta in 3 litres of salted boiling water for 9-11 minutes, stirring occasionally.
  2. Drain well & refresh it with plenty of cold water and keep aside.
  3. Wash, wipe, core & dice the apples & immerse them in chilled light sugar syrup until ready to use.
  4. String & cut celery into diamonds and immerse into light sugar syrup along with apples.
  5. Break lettuce leaves off the bunch, wash and immerse them in iced water to refresh.

Assemble:

  1. Drain the apples & celery and mix with cooked Spirali pasta.
  2. Add shelled & halved walnuts, mayonnaise, salt & freshly cracked black pepper and mix well. Check & adjust the seasoning if required.
  3. Arrange the salad on the bed of lettuce leaves on salad platter / bowl / dish.
  4. Garnish with few reserved walnuts and fresh parsley (optional) and serve immediately.
