Pineapple & Chilli Peanut Fried Rice

Ingredients

  • Crushed garlic – 1 tsp
  • Carrots, thinly sliced – 1 tbsp
  • Spring onions, chopped – 1 tbsp
  • Green peas, shelled & cooked – 1 tbsp
  • Del Monte Sweet Corn Kernels, drained – 1 tbsp
  • Red pepper (capsicum), diced – 2 tsp
  • Del Monte Pineapple Tidbits, drained – 125 grams
  • Salt, pepper & sugar – to taste
  • White vinegar – 1 tsp
  • Del Monte Tomato Ketchup – 1 tbsp
  • Plain cooked rice (basmati) – 3-4 cups
  • Sunflower Oil – 1 tbsp

Method

  1. Heat a tbsp of oil in wok, sauté garlic, carrots, peas,Del Monte corn kernels and red pepper.
  2. Add spring onions, Del Monte pineapple tidbits, tomato ketchup, vinegar, seasoning and cooked rice. Mix well. Cook for 3-4 minutes, stirring constantly.

Notes

Cooked & chopped chicken and eggs may be replaced with carrots & sweet corn to create non-vegetarian option.
