Peach with Ice-Cream

Ingredients

  • Del Monte Peach Halves (drained) – ½ can / a peach half per portion
  • Butter – 1 tsp
  • Whipped cream – 1 cup
  • Fresh mint – 8-10 sprigs
  • Powdered sugar – 1 tbsp
  • Vanilla Ice-cream – 1 scoop per portion

Method

  1. Combine all ingredients in a blender. Blend until smooth & frothy.
  2. Cook Del Monte Peach halves with a tsp of butter on a very hot griddle or frying pan until char-grilled. Remove & let it cool.
  3. Roughly crush mint leaves with a tbsp of sugar & fold it in whipped cream.
  4. Arrange a grilled peach and a scoop of vanilla ice-cream per portion on a chilled dessert plate.
  5. Garnish the peach with the swirls of mint flavoured cream on & around it and place ice-cream scoop on the side topped with a red maraschino cherry or strawberry.
