1 tin Del Monte peach halves, drained, reserve 1 half for garnishing
200ml low fat cream, chilled
75ml honey or sugar
Juice of 1 lime
1tsp pure vanilla extract or vodka
Method
Place all ingredients in bowl of food processor and blend until smooth. Taste and adjust honey / sugar if required.
Place in ice cream machine and set according to manufacturers instructions.
If you don’t have an ice cream machine, set in a freezer safe dish, and whisk every hour to break down and distribute crystals. Leave to set overnight.
Variations: You can chop 2-3 peach halves and stir through the ice cream once it is beginning to set
Add a chopped mango before blending to get a taste variation.
Note: Vodka helps ensure that ice cream doesn’t set rock hard (vodka doesn’t freeze)
