Navrattan Pulao

Ingredients

  • Basmati Rice – 300 grams
  • Del Monte Fiesta Fruit Cocktail – 275 grams
  • Water or vegetable stock – 600 ml
  • Green Cardamom – 3 -4
  • Cloves – 3-4
  • Cinnamon – 1 inch stick
  • Cashew nuts Fried – 10 (optional)
  • Saffron – 1 pinch
  • Butter / Pure Ghee – 50 grams
  • Chopped ginger – 1 tsp
  • Salt – to taste

Method

  1. Pick, wash and soak Basmati rice in plenty of water for 20 minutes. Drain & keep aside. Heat butter / ghee in a thick bottom lidded pan.
  2. Crackle cardamom, clove, cinnamon & ginger in it.
  3. Add water or vegetable stock, season with salt & bring it to boil.
  4. Add drained rice, saffron & fruits. Stir just once and bring it to boil.
  5. Cover & simmer for 8 to 10 minutes or until all the liquid is evaporated. Remove from fire & leave for 10 minutes.
  6. Serve hot, garnished with fried cashew nuts.
  7. Handful of Del Monte Californian Prunes may be added alongwith fruits to enrich the Pulao.
