Ingredients
Basmati Rice – 300 grams
Del Monte Fiesta Fruit Cocktail – 275 grams
Water or vegetable stock – 600 ml
Green Cardamom – 3 -4
Cloves – 3-4
Cinnamon – 1 inch stick
Cashew nuts Fried – 10 (optional)
Saffron – 1 pinch
Butter / Pure Ghee – 50 grams
Chopped ginger – 1 tsp
Salt – to taste
Method
Pick, wash and soak Basmati rice in plenty of water for 20 minutes. Drain & keep aside. Heat butter / ghee in a thick bottom lidded pan.
Crackle cardamom, clove, cinnamon & ginger in it.
Add water or vegetable stock, season with salt & bring it to boil.
Add drained rice, saffron & fruits. Stir just once and bring it to boil.
Cover & simmer for 8 to 10 minutes or until all the liquid is evaporated. Remove from fire & leave for 10 minutes.
Serve hot, garnished with fried cashew nuts.
Handful of Del Monte Californian Prunes may be added alongwith fruits to enrich the Pulao.
