Mixed Fruit Summer Cooler

Ingredients

  • 2 cans of Del Monte mixed fruit drink
  • 1 small watermelon, seeds removed, cut
  • 2 small cucumbers, peeled, roughly cut
  • Juice of 2 limes
  • 1/4 cup honey {more if required}
  • Fresh mint

Method

  1. Cut 15-18 small squares of watermelon, deseed and toss in juice of 1 lime and 1 tbsp of honey. Chill. Deseed the rest and chop the rest roughly.
  2. Peel and chop the cucumbers and run with remaining watermelon in a blender until completely liquidised. Push through a sieve, discard pulp.
  3. Add the mixed fruit drink, remaining honey, lime juice and honey and blend until well mixed. Taste and adjust sweetness if required.
  4. Add the reserved watermelon squares and mint leaves and chill for 1-2 hours, or until ready to serve.

 

Note: Can be made a day ahead.
