Marinated Olives & Mixed Grill on Rosemary Skewers

Ingredients

  • Del Monte Extra Virgin Olive Oil – 2 tbsp
  • Del Monte Pitted / Stuffed Green Olives – 25 nos.
  • Del Monte Californian Prunes – 25 nos.
  • Chicken tikka-grilled – 5 nos.
  • Paneer tikka-grilled – 5 nos.
  • Chicken sausages-grilled – 5 nos.
  • Meat balls-cooked – 5 nos.
  • Mutton seekh kebab-grilled – 5 nos.
  • Fresh basil leaves-shredded – small bunch
  • Garlic-finely sliced – 1 tbsp
  • Fresh red chilli-finely sliced – 1 tbsp
  • Salt – to taste
  • Bamboo/Rosemary skewers or tooth picks – 25

Method

  1. Combine finely sliced garlic, red chilli, Basil, extra virgin olive oil and salt in a glass bowl. Marinate olives & prunes in it. Allow the flavours to blend together for a couple of hours.
  2. Pierce a piece of grilled protein onto bamboo/rosemary skewer alternately with the marinated prunes and olives. Repeat until all the olives & mixed grill have been used.
  3. Serve warm or cold as a ‘spirited’ starter.
