Black Olive Tapenade

Ingredients

  • Del Monte Black Pitted/Sliced Olives – 1 cup
  • Del Monte Extra Virgin Olive Oil – ½ cup
  • Capers – 2 tbsp
  • Garlic, crushed – 2 tsp
  • Fresh Basil or Parsley, chopped -1 tbsp
  • Freshly Squeezed Lemon Juice – 1 tbsp
  • Lemon Zest – ½ tsp
  • Cracked Black Pepper – ½ tsp
  • Sea / Rock Salt – ½ tsp

Method

  1. Place all ingredients in a food processor / blender and blend to combine until mixture becomes a coarse paste.
  2. Serve it as a spread on ciabatta or crusty bread. Liberal spread of tapenade & slices of mozzarella cheese in brown bread will make a hearty & delicious sandwich.
